    I’ve always been a big believer in grazing food at airports – small servings which people can eat & run or eat as they walk around. Not only does it reduce the amount F&B cuts into the shopping dwell time but it basically encourages people to spend more because you don’t notice a number of smaller purchases.

    At JFK they sell cakes, confectionary & apples on sticks. Not only do they look positively irrestistable, they’re easy to grab and take to the gate – or take while browsing the shops.

They apparently also have locations in Houston & Florida.

    Its owned by Dylan Lauren, daughter of designer Ralph Lauren, so its perhaps not surprising to find some interesting design features to the store.

    Melbourne Airport ran a Duty Free promotion this Christmas and must and delved back into the archives to come up with this idea… I don’t know if this was orchestrated by Nuance or by Melbourne Airport itself but I’m assuming it was Nuance.

    People got into a sealed wind box with duty free vouchers of different values swirling around them. The challenge was to catch one of course. Each turnaround took 4-5 mins by the time someone got in, it was set up, they picked & got out again. Weird idea for the Christmas rush period and as you can see from the photo it wasn’t exactly a show stopper.

    Well I guess you can’t criticise this Souvenir concession at Minneapolis St Paul Airport for not having a sense of place. A sense of taste though?

    One thing though is that souvenir stores aren’t meant to look classy. Its not the way the product category generally works. In fact in so many cases in airports I’ve seen operators try to make the store look better, more exclusive & upmarket and its almost always been at the expense of sales.

    Airport souvenir sales are generally impulse driven, value purchases and a store which looks too expensive or exclusive has a tendency to put people off. In this category anyway.
